Ingredients

Nutella Discs

  • 10 - 14 tbsp Nutella

Pancake Batter

  • 1 1/2 cups plain flour
  • 3 tsp baking powder
  • 4 tbsp sugar
  • Pinch of salt
  • 1 egg
  • 1 cup + 2 tbsp low-fat milk
  • 1 tsp vanilla essence (optional)
  • 1 tsp butter, separated (2 x 1/2 tsp)

Instructions

  1. Prepare Nutella Discs: Line a baking tray with parchment paper. Spoon 1 1/2 to 2 tbsp of Nutella onto the tray and spread into discs about 2 1/2 inches (6 cm) in diameter and 1/5 inch (1/2 cm) thick. Repeat to make 7 discs. Place the tray in the freezer for 1 to 1 1/2 hours until the discs are firm. Peel off the parchment paper and keep the discs frozen until use, as they soften quickly.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, sugar, and a pinch of salt until well combined.
  3. Mix Wet Ingredients: Create a well in the center of the dry mix. Add the egg, milk, and vanilla essence (if using) into the well. Whisk until the batter is smooth and lump-free, but avoid overmixing to maintain fluffiness.
  4. Prepare Frying Pan: Melt 1/2 tsp butter in a non-stick frying pan over medium heat. Once melted, wipe off most of the butter with a paper towel to prevent excess oiliness.
  5. Cook Pancakes with Nutella Center: Take 3 frozen Nutella discs out of the freezer just before cooking. Pour 1/4 cup of batter into the pan. Quickly place 1 frozen Nutella disc in the center of the batter and cover it with a bit more batter. Cook until bubbles appear around the edges (about 2 minutes), then lift the edge to check if the underside is golden. Flip and cook the other side until golden brown.
  6. Repeat Cooking: Continue cooking the remaining batter and Nutella discs. Melt additional butter in the pan after the 3rd or 4th pancake as needed. You should get about 6 to 7 pancakes, depending on the amount of batter used for covering Nutella.
  7. Serve: Serve the Nutella stuffed pancakes warm, optionally with sliced strawberries for a fresh touch. Cream can also be added, though it's not necessary.

Notes

  • Freeze Nutella discs in advance to prevent the Nutella from melting into the batter while cooking.
  • Wiping off most of the melted butter reduces greasy pancakes but retains enough fat for cooking.
  • Handle frozen Nutella discs quickly to keep them from softening before cooking.
