Ingredients
Crust
½ cup butter, melted
2½ cups chocolate baking crumbs (383 grams)
Filling
¾ cup chopped chocolate (100 grams)
1 cup plus 1 tablespoon heavy cream, divided
3 packages cream cheese (250 grams/8 oz each)
¾ cup Nutella or other chocolate hazelnut spread (200 grams)
1 cup powdered icing sugar (110 grams)
Garnish (optional)
Whipped cream
Berries
Instructions
Prepare the crust: Line a 9x13 inch pan with tin foil or parchment paper for easy removal. Combine the melted butter and chocolate baking crumbs in a bowl, then press the mixture evenly into the bottom of the pan to form the crust.
Melt chocolate mixture: In a small bowl, combine the chopped chocolate with 1 tablespoon of heavy cream. Microwave on high for 45 seconds, then stir until smooth. Set aside to cool to room temperature.
Make the cheesecake base: Using an electric mixer, beat the cream cheese until smooth and creamy. Add Nutella and powdered icing sugar, continuing to beat until fully combined. Then, add the cooled chocolate mixture and beat until smooth and uniform.
Whip cream: In a separate bowl, beat 1 cup of heavy cream on high speed until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture using low speed or a spatula until just combined, preserving the light texture.
Assemble and chill: Spread the cheesecake filling evenly over the prepared crust. Refrigerate for at least 8 hours to set. For easier removal and cleaner slicing, you can place the bars in the freezer for 1-2 hours before serving. Serve chilled or partially frozen, garnished with whipped cream and berries if desired.
Notes
Line the pan with parchment or foil to make removing the bars easier.
Allow the melted chocolate mixture to cool completely before adding to prevent melting the cream cheese mixture.
Be careful not to overmix the whipped cream into the filling to keep the texture light and fluffy.
The bars can be stored refrigerated for up to 3 days or frozen for longer storage.
Serving the bars partially frozen provides a firmer texture and a refreshing treat.
