Ingredients

Protein

  • 1 pound ground chicken

Vegetables

  • 5 cups cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced

Oils and Sauces

  • 2 tbsp olive oil, divided
  • 2 tbsp coconut aminos or low sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tbsp hoisin sauce
  • 2 tsp chili garlic sauce, or more to taste

Garnish

  • Sesame seeds for serving, if desired
  • Green onions for serving, if desired

Instructions

  1. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground chicken and cook it for 3-4 minutes until browned and no longer pink. Drain any excess grease, then transfer the cooked chicken onto a plate and set aside.
  2. Sauté the vegetables: Add the remaining tablespoon of olive oil to the same skillet. Toss in the sliced cabbage and julienned carrots. Sauté over high heat for 4-5 minutes until the vegetables are golden brown on the edges and tender. Stir in the minced ginger and garlic, cooking for an additional minute to release their flavors.
  3. Combine chicken and sauce: Return the cooked ground chicken to the skillet. Pour in the coconut aminos (or low sodium soy sauce), sesame oil, rice wine vinegar, hoisin sauce, and chili garlic sauce. Stir everything thoroughly to coat the chicken and vegetables evenly with the sauce, warming through for a minute or two.
  4. Serve: Immediately plate the dish and garnish with sesame seeds and sliced green onions if desired for added texture and freshness.

Notes

  • For a vegetarian version, substitute ground chicken with crumbled tofu or textured vegetable protein.
  • Adjust the amount of chili garlic sauce according to your heat preference.
  • Using coconut aminos instead of soy sauce offers a gluten-free alternative with a slightly sweeter taste.
  • Serve this dish over rice or cauliflower rice for a more filling meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
