Ingredients

Wet Ingredients

  • 1 stick butter, melted and cooled slightly
  • 1 cup sugar
  • 2 eggs
  • 2 tablespoons strong brewed coffee, at room temperature
  • 2 teaspoons peppermint extract

Dry Ingredients

  • 3/4 cup flour
  • 1/2 cup cocoa powder
  • Pinch of Kosher salt

Toppings

  • 1/2 cup crushed candy canes

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it’s ready when your batter is prepared.
  2. Mix Butter and Sugar: In a large bowl, stir together the melted and slightly cooled butter with the sugar until well combined, creating a smooth base.
  3. Add Eggs and Flavors: Stir in the eggs, brewed coffee, and peppermint extract into the butter and sugar mixture until fully incorporated, enhancing flavor and texture.
  4. Incorporate Dry Ingredients: Add flour, cocoa powder, and a pinch of kosher salt to the wet mixture. Gently mix until just combined to avoid overworking the batter.
  5. Fold in Candy Canes: Carefully fold half of the crushed candy canes into the brownie batter to infuse minty chunks throughout.
  6. Prepare Pan and Add Batter: Line an 8×8 inch baking dish with parchment paper, pour in the batter, and use a spatula to spread it evenly across the pan.
  7. Add Toppings: Sprinkle most of the remaining crushed candy canes on top of the batter, saving about half a tablespoon for after baking if desired.
  8. Bake Brownies: Bake in the preheated oven for 20-25 minutes, or until the edges start to pull away from the pan and the center is set but still moist.
  9. Cool and Garnish: After baking, sprinkle the reserved crushed candy canes over the top and allow the brownies to cool for at least an hour before slicing to ensure clean cuts and optimal texture.

Notes

  • Using strong brewed coffee enhances the chocolate flavor without making the brownies taste like coffee.
  • Be careful not to overmix the batter once flour is added to keep brownies tender.
  • If peppermint extract is too strong for your liking, reduce the amount slightly to suit your taste.
  • Letting brownies cool completely makes it easier to cut clean slices.
  • You can store these brownies in an airtight container at room temperature for up to 3 days.
