Instructions

  1. Prepare the batter: In a mixing bowl, combine the all-purpose flour, granulated sugar, and baking soda. In a separate bowl, mix the ricotta cheese, lightly beaten eggs, and vanilla extract until smooth. Gradually add the dry ingredients to the wet mixture and stir until a thick batter forms.
  2. Heat the oil: Pour vegetable oil into a deep frying pan or pot to a depth of about 2-3 inches. Heat the oil to 350°F (175°C), using a thermometer to maintain accuracy to ensure crisp and even frying.
  3. Fry the zeppole: Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes per side, or until golden brown and puffed up.
  4. Drain and cool: Use a slotted spoon to remove the fried zeppole from the oil. Place them on a plate lined with paper towels to drain excess oil.
