Zebra Cookies are delightful striped cookies combining vanilla and chocolate doughs to create a visually striking zebra pattern. These tender, buttery cookies offer a perfect balance of rich cocoa flavor and classic vanilla sweetness, making them an irresistible treat for any occasion.

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Prepare the Dry Mix: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and cocoa powder to ensure even distribution of the dry ingredients.
  2. Cream Butter and Sugar: In a separate large bowl, beat the softened unsalted butter with granulated sugar until the mixture is light and fluffy, which usually takes about 3 to 4 minutes using an electric mixer.
  3. Add Egg and Vanilla: Beat in the large egg and vanilla extract until fully combined and smooth.
  4. Combine Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, beating slowly to prevent flour from flying out and continuing until a dough begins to form.
  5. Add Milk: Stir in the milk to slightly soften the dough; this helps in creating a pliable consistency for the zebra pattern.
  6. Divide Dough and Add Cocoa: Remove about half of the dough and incorporate the cocoa powder into that half if it wasn't mixed thoroughly before, ensuring you have one vanilla dough and one chocolate dough. Alternatively, if cocoa was mixed in step 1 for all dry ingredients, separate dough into two portions and leave one plain to keep vanilla flavor.
  7. Shape the Dough: On a lightly floured surface, roll the vanilla and chocolate doughs into long thin logs. Stack or twist the logs together to form a zebra striped log.
  8. Slice the Cookies: Chill the log briefly to firm up, then slice into 1/4 inch thick rounds, revealing the zebra stripe pattern on each cookie.
  9. Bake: Preheat the oven to 350°F (175°C). Arrange cookie slices on a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10 to 12 minutes or until the edges are just starting to turn golden and the centers are set.
  10. Cool and Serve: Remove cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your Zebra Cookies with a glass of milk or tea.

Notes

  • Ensure butter is softened but not melted for proper creaming with sugar.
  • Chilling the dough logs before slicing helps keep the stripes defined during baking.
  • Use parchment paper or silicone baking mats to prevent sticking and promote even baking.
  • For a richer chocolate flavor, consider using Dutch-processed cocoa powder.
  • Cookies keep well in an airtight container at room temperature for up to 5 days.
