Ingredients

Chicken

  • 2 lbs boneless skinless chicken thighs or breast

Marinade

  • 1 cup full-fat Greek yogurt
  • 1/4 cup harissa paste
  • 3 tbsp olive oil
  • 1/2 lemon (zest and juice)
  • 3 cloves garlic (grated)
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp smoked paprika
  • 1 tbsp kosher salt
  • Freshly cracked black pepper to taste

Instructions

  1. Marinate: In a medium bowl, combine Greek yogurt, olive oil, harissa paste, lemon zest, lemon juice, grated garlic, ground cumin, turmeric, smoked paprika, kosher salt, and freshly cracked black pepper. If using skewers, cut chicken into large bite-sized pieces about 2 inches. Add chicken to the marinade, tossing until evenly coated. Cover and refrigerate for at least 3 hours or up to 25 hours to allow flavors to penetrate.
  2. Skewer: Remove chicken from marinade, scraping off excess. Thread chicken pieces onto long skewers carefully without overcrowding. You’ll likely need 8-10 skewers. Alternatively, skip skewers and grill the pieces directly.
  3. Grill: Preheat a grill or grill pan over medium-high heat and lightly brush the grill surface with a high-heat neutral oil. Grill the chicken, turning occasionally, until golden brown and fully cooked through—about 13 to 15 minutes. Transfer the chicken to a platter, season lightly with salt if desired, and serve immediately.

Notes

  • Marinating the chicken overnight enhances flavor and tenderness.
  • Use high-quality harissa paste for authentic smoky and spicy notes.
  • Ensure grill grates are well oiled to prevent chicken from sticking.
  • Chicken can be cooked on stovetop grill pans if an outdoor grill is unavailable.
  • Adjust harissa paste quantity for preferred spice level.
  • Serve with rice, flatbreads, or a fresh salad for a complete meal.
