Delightfully creamy and festive, these White Christmas Truffles combine smooth white chocolate with the sweetness of dried cranberries, the crunch of pistachios, and a coating of desiccated coconut for a perfect holiday treat.

Ingredients

Truffle Mixture

  • 180g white chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1 tsp vanilla bean paste (optional)
  • 40g (1/4 cup) dried cranberries, chopped
  • 40g (1/4 cup) pistachios, chopped

Coating

  • 35g (1/3 cup) desiccated coconut

Instructions

  1. Prepare the ganache base: In a heatproof bowl, combine the chopped white chocolate and thickened cream. Heat gently over a double boiler or microwave in short bursts, stirring regularly, until the chocolate has completely melted and the mixture is smooth.
  2. Add flavorings: Stir in the vanilla bean paste if using, then fold through the chopped dried cranberries and pistachios, distributing them evenly throughout the ganache mixture.
  3. Chill the mixture: Cover the bowl with cling wrap and refrigerate the mixture for at least 2 hours or until firm enough to handle.
  4. Shape the truffles: Using a teaspoon or melon baller, scoop out small portions of the mixture and roll between your hands to form smooth, compact balls.
  5. Coat the truffles: Roll each truffle in the desiccated coconut until fully coated, giving each one a snowy white finish perfect for the holiday season.
  6. Final chill and serve: Place the coated truffles on a tray lined with baking paper and refrigerate again for 30 minutes to set. Serve chilled for best texture and flavor.

Notes

  • For best results, use high-quality white chocolate as it forms the base flavor.
  • Vanilla bean paste is optional but adds a lovely depth of flavor.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • These truffles make excellent gifts when placed in decorative boxes or tins.
  • To vary, try rolling truffles in chopped nuts or cocoa powder instead of coconut.
