White Chocolate Pretzel Clusters are a delightful no-bake treat combining creamy white chocolate and peanut butter with crunchy Rice Krispies, salty pretzel pieces, and sweet toffee bits. Perfect for a crowd or gifting, these clusters are easy to make and deliver a perfect balance of sweet, salty, and crunchy flavors.

Ingredients

Mix

  • 2-3/4 cups white chocolate chips (use the best quality you can)
  • 1-3/4 cups creamy peanut butter (such as Skippy)
  • 2 cups Rice Krispies cereal
  • 2 cups pretzel twists
  • 1/2 cup toffee bits (plus more for topping)

Toppings (Optional)

  • 1/4 cup mini chocolate chips

Instructions

  1. Prep: Line two large sheet pans with parchment paper, foil, wax paper, or silicone liners to prepare for portioning the clusters later. Place the toffee bits in the freezer to keep them firm until mixing.
  2. Melt Mixture: In a large microwave-safe bowl, combine white chocolate chips and creamy peanut butter. Microwave in 25-second intervals, stirring for 20 seconds between each, until the mixture is fully melted and smooth. Allow the mixture to cool slightly until it remains warm but not hot.
  3. Add Mix-Ins: Measure the pretzel twists and place them in a large zip-top bag. Crush them using a meat mallet or rolling pin until you obtain coarse pieces. Combine these crushed pretzels with Rice Krispies cereal and the frozen toffee bits in a large mixing bowl. Pour the warm white chocolate and peanut butter mixture over the dry ingredients and stir gently to coat everything evenly, taking care not to overmix or the toffee bits may melt.
  4. Portion Out: Using a 1 or 2-tablespoon scoop, portion the mixture onto the prepared pans. Sprinkle additional toffee bits and mini chocolate chips on top if desired for extra texture and flavor.
  5. Serve: Refrigerate the clusters for 1 hour or until firm. Serve chilled directly from the refrigerator for the best texture and enjoyment.

Notes

  • Use a 1 or 2-tablespoon scoop to ensure uniform cluster sizes and easier serving.
  • Freezing the toffee bits before mixing helps maintain their crunch and prevents them from melting into the mixture.
  • These clusters can be stored in an airtight container in the refrigerator for up to one week.
  • For a nut-free version, substitute peanut butter with sunflower seed butter and ensure toffee bits are nut-free.
