Ingredients

Raspberry Compote

  • 1 cup raspberries (fresh or frozen)

Mousse

  • 12 oz cream cheese, whipped
  • 1 cup heavy whipping cream
  • 1½ tbsp real vanilla extract
  • 1 cup white chocolate (half to be melted)
  • 1 tbsp white granulated sugar

Instructions

  1. Prepare the Raspberry Compote: In a saucepan over medium heat, combine 8 oz. of the raspberries, 1 tsp. fresh rosemary leaves, and 1½ tbsp. sugar. Break the raspberries apart with a spoon, allowing them to simmer. After about 3 minutes, lower the heat and let the mixture simmer and reduce for 10-15 minutes, stirring occasionally to prevent sticking.
  2. Strain the Compote: Using a small mesh strainer over a bowl, press the raspberry mixture through to separate out seeds and rosemary leaves, creating a smooth, semi-gel-like compote. If the compote is too runny, simmer it for an additional 5 minutes or thicken with 1-2 tsp of corn starch. Cover and refrigerate to chill.
  3. Melt the White Chocolate: Place 1 cup white chocolate in a double boiler or a heatproof container within a saucepan with some water over medium heat. Stir occasionally until fully melted, approximately 10 minutes.
  4. Whip the Cream: In a mixing bowl, whip 1 cup heavy cream on high speed until thick and small peaks form. Then add 12 oz whipped cream cheese, 1½ tbsp vanilla extract, and 1 tsp sugar. Mix thoroughly until smooth and well combined.
  5. Combine Mousse Ingredients: Slowly add the melted white chocolate into the cream cheese mixture and blend thoroughly until all ingredients are fully incorporated. Transfer to a container with a lid and refrigerate for at least 4 hours to set.
  6. Prepare Pastry Bag for Assembly: Fit your pastry tip in a piping bag and secure it with a twisty tie just above the tip. Fold back the top of the bag slightly to keep things neat and place the bag upright in a jar or cup.
  7. Layer Mousse and Compote: Spoon a heaping tablespoon of mousse into the bag, pressing it down to the tip. Add about a teaspoon of raspberry-rosemary compote on top, spreading it slightly for marbling. Repeat layers of mousse and compote until the bag is filled.
  8. Store or Serve: Seal the top of the bag with a twisty tie and refrigerate until ready to serve, or remove the twisty tie at the tip to pipe the layered mousse and compote directly into serving glasses.
