Ingredients

Pastry:

  • 200 g plain flour
  • 100 g unsalted butter, cold and cubed
  • 4 tbsp cold water
  • 1 pinch of salt

Filling:

  • 50 g unsalted butter, softened
  • 50 g caster sugar
  • 85 g plain flour
  • 1/2 tsp baking powder
  • 1 medium egg
  • 1 tbsp milk
  • ½ lemon zest (optional)
  • 2 tbsp raspberry jam

Instructions

  1. Prepare the Pastry: In a large bowl, combine the plain flour and a pinch of salt. Rub in the cold cubed butter with your fingertips until mixture resembles fine breadcrumbs. Gradually add the cold water, mixing until the dough comes together. Wrap the dough in cling film and chill for at least 30 minutes.
  2. Make the Filling: In a separate bowl, beat the softened butter and caster sugar until creamy. Mix in the plain flour and baking powder, then add the egg and milk, stirring until smooth. Fold in the lemon zest if using.
  3. Preheat Oven and Prepare Tins: Preheat your oven to 180°C (350°F). Lightly grease small tart or muffin tins to prevent sticking.
  4. Roll Out the Pastry: On a lightly floured surface, roll the chilled pastry dough to about 3mm thickness. Cut out rounds slightly larger than your tart tins and gently press them into the tins.
  5. Fill and Add Jam: Spoon the filling mixture evenly into the pastry cases. Top each with a small dollop of raspberry jam to add fruity sweetness.
  6. Bake: Bake in the preheated oven for 20-25 minutes or until the cheesecakes are golden on top and the pastry is cooked through.
  7. Cool and Serve: Allow the Welsh Cheesecakes to cool in the tins for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
