Ingredients

Roasted Sweet Potatoes

  • 2 large sweet potatoes, diced
  • 1½ tablespoons olive oil
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp garlic powder
  • 1 tsp paprika

Seasoned Ground Beef

  • 1 lb ground beef
  • 1 full Taco seasoning packet (about 3 tablespoons)
  • Splash of water

Street Corn Mixture

  • 1 (15 oz) can sweet corn, drained
  • 1 jalapeño, diced with seeds removed
  • 2 tbsp chopped cilantro
  • 2 tbsp sour cream or full-fat Greek yogurt
  • 2 tbsp mayo
  • Juice of ½ lime
  • 2 tbsp Cotija cheese or grated Parmesan

Toppings

  • Sliced avocado
  • Chile lime seasoning

Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat the oven to 180°C (350°F). Place the diced sweet potatoes on a baking tray and drizzle with olive oil. Season with salt, black pepper, garlic powder, and paprika, tossing until evenly coated. Bake for 20–30 minutes, stirring halfway through, until the potatoes are tender and golden brown.
  2. Cook Seasoned Ground Beef: While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef and sprinkle with taco seasoning. Cook the beef, breaking it up with a spatula, until browned and cooked through. Add a splash of water to help distribute the seasoning evenly and stir well.
  3. Prepare Street Corn Mixture: In a separate bowl, combine the drained sweet corn, diced jalapeño, chopped cilantro, sour cream or Greek yogurt, mayo, lime juice, and Cotija cheese or Parmesan. Mix thoroughly until all ingredients are well coated and blended.
  4. Assemble Bowls: Divide the roasted sweet potatoes equally between two serving bowls. Top with the seasoned ground beef, then spoon the creamy street corn mixture over the top.
  5. Add Final Toppings: Finish the dish by adding sliced avocado to each bowl and sprinkling with chile lime seasoning to taste. Serve immediately for the best flavor and texture.

Notes

  • For a spicier kick, include the seeds in the jalapeño or add extra chile lime seasoning on top.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • If Cotija cheese is unavailable, grated Parmesan works well as an alternative.
  • Using full-fat Greek yogurt instead of sour cream offers a tangy and nutritious twist.
  • Leftover roasted sweet potatoes can be stored in the refrigerator for up to 3 days.
