This Viral Pickle Sandwich features crispy baked cheese wraps filled with tangy pickle slices and your choice of fresh sandwich ingredients, creating a delicious low-carb alternative to traditional bread sandwiches. Perfect for a quick snack or a light lunch, this recipe combines melty cheese and crunchy pickles baked to golden perfection, then stacked with deli meats, tomatoes, and lettuce for a satisfying bite.

Ingredients

Cheese Wraps

  • 4 slices cheese (such as cheddar or mozzarella)
  • 4 pickle slices

Sandwich Fillings

  • Cold cuts (e.g., turkey, ham, or roast beef) – amount as desired
  • Tomato slices – as desired
  • Onion slices – as desired
  • Lettuce leaves – as desired

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet or small baking pan with parchment paper to prevent sticking and make cleanup easier.
  2. Assemble Cheese Wraps: Place 2 slices of cheese on the prepared baking sheet. On top of each slice, add 2 pickle slices. Cover each with another slice of cheese, creating two sandwich-like cheese and pickle stacks.
  3. Bake Cheese Wraps: Bake in the preheated oven for 15–20 minutes, or until the cheese is fully melted, golden, and crisp around the edges, forming a crispy cheese shell.
  4. Cool Cheese Wraps: Remove the baking sheet from the oven and let the cheese wraps cool down until they are firm enough to handle without breaking apart.
  5. Build Sandwiches: Place your preferred deli meat, tomato slices, onion, lettuce, or any other sandwich fillings on one of the cheese-and-pickle layers. Top with the second cheese-and-pickle layer to complete the sandwich, then serve immediately for best texture and flavor.

Notes

  • Use cheese slices that melt well, such as cheddar or mozzarella, for best results.
  • Allow the cheese wraps to cool completely before assembling to ensure they hold together and don’t fall apart.
  • Customize the sandwich fillings to your taste preferences.
  • This recipe makes a low-carb alternative for traditional bread sandwiches.
  • For extra crispiness, you can broil the cheese wraps for a minute or two but watch closely to avoid burning.
