  • 400 g Carrots, cut into small coins
  • 300 g Glutinous Rice Flour

Sauce

  • 1 Tablespoon Chili Crisp Oil
  • 1 Tablespoon Rice Vinegar
  • 1 Tablespoon Soy Sauce

Optional Garnishes

  • Sesame Seeds (to taste)
  • Green Onions (sliced, to taste)

Instructions

  1. Boil Carrots: Boil the carrot coins in a pot of salted water until they become very tender and almost mushy, which usually takes about 15-20 minutes.
  2. Mash Carrots: Drain the cooked carrots, reserving ½ cup of the carrot cooking water. Place the carrots in a bowl and mash them until smooth.
  3. Make Dough: Add the glutinous rice flour to the mashed carrots and mix until a smooth dough forms. Adjust the dough consistency by adding some reserved carrot water if it feels too dry or more flour if it is too wet.
  4. Shape Noodles: Pinch off small pieces of dough about the size of a marble and shape each into a ball. Press a small indent in the center of each ball to create the button shape.
  5. Cook Noodles: Boil a pot of salted water and cook the carrot button noodles for about 3 minutes until they float and become tender.
  6. Prepare Sauce: While the noodles are cooking, mix together the chili crisp oil, rice vinegar, and soy sauce in a small bowl to create the sauce.
  7. Toss and Serve: As soon as the noodles come out of the boiling water, toss them with some of the chili crisp sauce to prevent sticking. Divide into two bowls, garnish with additional chili crisp sauce, sesame seeds, and green onions if desired, and serve immediately.
