Apples

Filling

  • 2 tbsp coconut oil, melted (30 g)
  • 3 tbsp coconut sugar or brown sugar (38 g)
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg (optional)
  • 1/4 tsp ground ginger (optional)

To Serve (Optional)

  • Drizzle of maple syrup
  • Dairy-free whipped cream or vanilla ice cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the stuffed apples.
  2. Prep Apples: Cut the tops off 4 apples with a level cut, saving the tops for other uses or discarding them. Core each apple by scooping out the center with a spoon or knife, then scrape the inside to create a hollow cavity for the filling. Place the hollowed apples in a baking dish.
  3. Mix Filling: In a bowl, combine the rolled oats, dried cranberries or raisins, chopped nuts, melted coconut oil, coconut sugar, cinnamon, and optional spices like nutmeg and ground ginger. Mix thoroughly to blend all ingredients evenly.
  4. Stuff Apples: Spoon the oat mixture into the cavity of each apple, filling them completely. If extra filling remains, you can use it to stuff 1-2 additional apples.
  5. Add Water: Pour about 1/2 inch of water into the bottom of the baking dish. This helps keep the apples moist while baking.
  6. Bake: Bake the stuffed apples in the preheated oven for 35-40 minutes, or until the filling is golden brown and apples are soft and tender.
