  • 1/4 cup vegan butter
  • 1/4 cup capers
  • 1 cup vegan chicken broth (or vegan dry white wine)
  • 1/4 cup lemon juice (from 2-3 lemons plus more for wedges)
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 1/3 cup fresh parsley, chopped

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and set aside.
  2. Prepare the protein: Heat a skillet over medium heat and add a little olive oil. Pan-fry the vegan chicken or tofu pieces for about 3 minutes on each side until cooked through and nicely browned. Remove from skillet and set aside.
  3. Make the piccata sauce: In the same skillet, add 3 tablespoons olive oil. Peel and dice the shallots and mince the garlic. Add both to the skillet and cook over low heat for 3-5 minutes until translucent and fragrant.
