Instructions

  2. Mix Wet Ingredients: In a separate bowl, whisk together the melted vegan butter, sugar, non-dairy milk, lemon juice, lemon zest, and vanilla extract using a balloon whisk until well combined.
  3. Add Dry Ingredients: Whisk in the baking powder, then fold in the self-raising flour. Stir until the batter is smooth and free of dry lumps, being careful not to overmix to maintain a light texture.
  4. Assemble Pudding: Pour the prepared batter gently into the pudding basin, layering it over the syrup mixture.
  5. Microwave Cooking: Microwave the pudding uncovered on high for 5 minutes. Check for doneness by testing with a skewer—it should come out clean or with just a few crumbs. If needed, microwave for an additional minute until fully cooked.
