Instructions

  2. Add herbs: Stir in the fresh sage leaves and chopped thyme and continue sautéing for 2 more minutes, stirring frequently to release their fragrance.
  3. Season mixture: Pour in the lemon juice, vegan Worcestershire sauce, salt, onion powder, garlic powder, and ground black pepper. Sauté for an additional 2 minutes, stirring often to blend all flavors well.
  4. Mash butter beans: In a large mixing bowl, add the cooked butter beans and mash them with a fork until mostly smooth but retaining some texture.
  5. Combine ingredients: Add the oat flour to the mashed beans and mix well. Then fold in the cooked onion and herb mixture until the batter is evenly combined and cohesive.
  6. Prepare flour dusting: Pour a thin layer of oat flour onto a large plate or shallow bowl for coating the sausages.
  7. Form sausages: With wet hands, take a handful of the sausage mixture and shape it into a small log approximately 4 inches long. Roll this log in the oat flour to coat lightly, then set it aside. Repeat until all mixture is shaped.
