Ingredients

For the Corn

  • 2 ears corn, husked
  • Olive oil, for brushing
  • Salt & pepper, to taste
  • Chili powder (optional), for sprinkling

For the Habanero Sauce

  • 1/2 cup vegan mayo
  • 1/4 cup olive oil
  • 1 habanero pepper, seeded if less heat desired
  • 1 tbsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1 clove garlic, peeled
  • 1/4 cup parsley, roughly chopped
  • 1 tbsp dried chives
  • Salt, to taste

For the Tostadas

  • Refried beans (store-bought or homemade)
  • 8 tostada shells
  • Lettuce, shredded
  • 1 large tomato, diced
  • 2 avocados, sliced
  • Cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Grill the Corn: Preheat a grill to medium-high heat. Brush the corn with olive oil and season with salt and pepper. Place the ears on the grill and cook for approximately 15 minutes, turning occasionally, until the corn is nicely charred on all sides. Remove from the grill and allow to cool until easy to handle. Carefully cut the kernels off the cob and transfer to a bowl. Sprinkle with chili powder if using, and set aside.
  2. Prepare the Habanero Sauce: In a food processor, combine vegan mayo, olive oil, habanero pepper, apple cider vinegar, onion powder, garlic clove, parsley, dried chives, and a pinch of salt. Pulse until the mixture is smooth and well combined. Taste and adjust the seasoning with more salt if needed.
  3. Heat the Refried Beans: Prepare the refried beans by heating them gently on the stovetop or in a microwave until warmed through.
  4. Warm the Tostada Shells: Preheat the oven to 350°F (175°C). Place the tostada shells directly on the oven rack and bake for 4-5 minutes until crisp and warm.
  5. Assemble the Tostadas: Spread a layer of warm refried beans onto each tostada shell. Add shredded lettuce, grilled corn kernels, diced tomato, and sliced avocado on top. Drizzle generously with habanero cream sauce and sprinkle with chopped cilantro. Serve immediately with lime wedges on the side for squeezing over.
