Instructions

  2. Add Ingredients and Simmer: Pour in the remaining vegetable stock along with the full can of chickpeas including their liquid. Stir in the smoked paprika, dried rosemary, and salt. Bring the mixture to a gentle simmer.
  3. Blend Soup: Carefully transfer the hot soup base into a blender and blend until smooth and creamy, ensuring an even texture.
  4. Heat Chickpeas: Return the blended soup to the pot and add the drained can of chickpeas to preserve some texture. Heat the soup for 3 to 5 minutes until the chickpeas are warmed through.
  5. Finish with Cilantro: Remove the pot from heat and stir in the fresh, roughly chopped cilantro for a bright, fresh flavor contrast.
