Ingredients

Rice and Vegetable Mixture

Tofu

  • ¼ teaspoon garlic powder
  • 2 teaspoons olive oil

Instructions

  1. Prepare Tofu: Press the extra-firm tofu to remove excess moisture, then crumble it into small pieces. In a bowl, combine the tofu with ground turmeric, salt, and garlic powder, tossing gently to distribute the spices evenly.
  2. Cook Tofu: Heat 2 teaspoons of olive oil in a large skillet or wok over medium heat. Add the spiced tofu and sauté until golden and slightly crispy, about 5-7 minutes. Remove tofu from the pan and set aside.
  3. Sauté Aromatics and Vegetables: In the same skillet, add diced onion, minced garlic, and minced ginger. Cook until fragrant and onions are translucent, about 3-4 minutes. Then add the chopped carrots, peas, and corn, continuing to sauté until vegetables are tender, about 5-6 minutes.
