This Vegan Coffee Cake is a moist and flavorful treat perfect for breakfast or afternoon snack. Made without dairy or eggs, it features a tender crumb with a sweet and spicy cinnamon streusel topping, using simple plant-based ingredients like soy milk, applesauce, and vegan butter. Baked in a 9x13 inch pan, it serves 16 and pairs wonderfully with your favorite cup of coffee.

Ingredients

Wet Ingredients

  • 1 1/4 cups unsweetened soy milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup canola oil (or melted coconut or avocado oil)
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons vegan butter (melted)

Dry Ingredients

  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar

Streusel Topping

  • 1 1/2 cups brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9 x 13 inch cake pan to prevent sticking.
  2. Make Vegan Buttermilk: In a small bowl, combine the unsweetened soy milk with apple cider vinegar. Stir briefly and let it sit for a few minutes to curdle slightly, creating a vegan buttermilk substitute.
  3. Mix Dry Ingredients: In a large mixing bowl, sift together or stir the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
  4. Combine Wet and Dry Mixtures: Pour the vegan buttermilk mixture, canola oil, unsweetened applesauce, and vanilla extract into the dry ingredients. Stir gently until the batter is just combined and smooth. Pour half of this batter into the prepared cake pan, spreading evenly.
  5. Prepare Cinnamon Streusel: In a small bowl, mix the brown sugar and cinnamon thoroughly to make the streusel topping.
  6. Layer Batter and Streusel: Sprinkle half of the cinnamon streusel mixture evenly over the batter in the pan. Then pour the remaining batter on top and smooth it out. Finally, sprinkle the remaining streusel evenly over the top layer of batter.
  7. Add Vegan Butter: Drizzle the melted vegan butter across the top of the streusel to add richness and a crunchy texture once baked.
  8. Bake the Cake: Place the pan in the preheated oven and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Note that the vegan butter on top may appear wet during baking but will harden upon cooling, creating a crisp topping.
  9. Cool and Serve: Allow the cake to cool slightly before slicing. Serve warm or at room temperature with a cup of coffee for a perfect vegan treat.
