This Cinnamon Apple Pie Vegan Chia Pudding is a wholesome, dairy-free dessert that combines creamy chia pudding with a warm, spiced apple topping. Perfect for a nutritious breakfast or a guilt-free treat, this recipe uses simple ingredients like chia seeds, unsweetened applesauce, maple syrup, and fresh apples cooked with cinnamon and nutmeg for a comforting, autumn-inspired flavor.

Ingredients

Chia Pudding

  • 1/3 cup chia seeds
  • 1/3 cup unsweetened applesauce
  • 1 1/4 cup milk of choice (dairy-free for vegan option)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon powder

Apple Pie Topping

  • 1 tablespoon coconut oil
  • 2 large apples, peeled and cubed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons maple syrup
  • Pecans for topping (optional)

Instructions

  1. Prepare the chia pudding: In a mixing bowl, combine the chia seeds, unsweetened applesauce, milk of choice, maple syrup, vanilla extract, and cinnamon powder. Stir well to ensure the chia seeds are evenly distributed. Cover and refrigerate for at least 4 hours or until the pudding has thickened and set.
  2. Cook the apple pie topping: Heat the coconut oil in a frying pan over high heat. Add the cubed apples along with cinnamon and nutmeg. Cook the mixture for 4 to 5 minutes, stirring occasionally to ensure the apples soften and the spices are well incorporated.
  3. Add sweetness and finish cooking topping: Stir in the maple syrup and continue to cook the apples for an additional 2 minutes, allowing the syrup to glaze the apples and develop a rich flavor.
  4. Assemble and serve: Once the chia pudding is set, spoon it into 4 serving jars or bowls. Top each serving generously with the warm apple pie topping. Optionally sprinkle with pecans. Serve immediately or refrigerate if preferred chilled.

Notes

  • You can use any plant-based milk such as almond, oat, or soy milk for the vegan option.
  • The pudding requires at least 4 hours of refrigeration to set properly; overnight is ideal.
  • Adjust the sweetness by adding more or less maple syrup according to taste.
  • Pecans add a nice crunch but can be omitted or replaced with walnuts or almonds.
  • For a thicker pudding, increase chia seeds to 1/2 cup.
