Ingredients

Cake:

Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 350° F (175° C) and grease an 8x8 inch baking dish thoroughly to prevent sticking.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all purpose flour, baking powder, baking soda, and salt until evenly combined.
  3. Combine wet ingredients: In another mixing bowl, beat together the granulated sugar, unsweetened apple sauce, oil, and dutch process cocoa powder. Carefully pour in 1 cup of boiling water and stir constantly until the mixture is smooth and well combined.
  4. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently fold in the grated zucchini. Be careful not to overmix the batter to keep the cake tender.
  5. Bake the cake: Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the cake: Let the cake cool in the pan for at least 30 minutes before transferring it to a wire rack to cool completely prior to frosting.
