Ingredients

Filling

  • 4 cups fresh blackberries (300 g)
  • 1.5 tbsp cornstarch (15 g)
  • 1 tbsp maple syrup (15 g)
  • 1 tsp vanilla extract (optional) (5 mL)
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice (30 mL)

Topping

  • 1 cup rolled oats (100 g)
  • 1/2 cup whole wheat flour (60 g)
  • 1/4 tsp salt
  • 2 tbsp maple syrup (45 g)
  • 1/4 cup coconut oil, melted (60 mL)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the crumble.
  2. Mix filling: In a medium bowl, combine the fresh blackberries, cornstarch, maple syrup, vanilla extract (if using), lemon zest, and fresh lemon juice. Stir well to coat the berries evenly with the mixture.
  3. Pour filling: Transfer the blackberry filling into an 8 x 8 inch baking dish, spreading it out evenly.
  4. Mix topping: In a separate bowl, use a fork or your fingers to mix together the rolled oats, whole wheat flour, salt, maple syrup, and melted coconut oil until a crumbly texture forms.
  5. Layer topping: Evenly sprinkle the crumble topping over the blackberry filling in the baking dish, ensuring an even coverage.
  6. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the topping is golden brown and crisp.
  7. Cool and serve: Remove from oven and allow it to cool slightly before serving. Enjoy your vegan blackberry crumble warm or at room temperature.
