Poached Pears

  • 200ml thickened cream
  • 75g butter
  • Pinch of salt
  • 3/4 tsp ground ginger

Instructions

  1. Prepare the poaching liquid: In a large pot, combine 1.5 litres of water with the caster sugar, vanilla bean pods (split and scraped), and cinnamon sticks. Bring to a gentle simmer, stirring until the sugar dissolves completely.
  2. Poach the pears: Peel the pears carefully, leaving stems intact if desired. Submerge them in the simmering poaching liquid. Poach gently for about 20–30 minutes or until the pears are tender when pierced with a knife, turning occasionally for even color and flavor.
  3. Make the gingerbread caramel: In a separate saucepan, melt the butter over medium heat. Add the brown sugar and stir until it dissolves and the mixture starts to bubble. Incorporate the ground ginger, cinnamon, allspice, cloves, nutmeg, and a pinch of salt to create the warm gingerbread spiced flavor. Slowly pour in the thickened cream while stirring continuously to form a smooth, rich caramel sauce. Allow it to simmer gently for 3–5 minutes until slightly thickened.
  4. Serve the dessert: Remove the poached pears from the liquid and place them on serving plates. Drizzle generously with the warm gingerbread caramel sauce. The pears can be served warm or chilled, depending on preference.
