Uncle Roger Egg Fried Rice is a quick and flavorful stir-fried rice dish featuring garlic, shallots, eggs, and a perfect blend of soy sauce, sesame oil, and a hint of MSG for that authentic umami punch. This recipe is a delicious and satisfying meal inspired by classic Asian fried rice techniques, ready in just 20 minutes.

Ingredients

Main Ingredients

  • 2 tbsp Peanut Oil
  • 5 Garlic Cloves, smashed
  • 1 Shallot, sliced
  • 1 Egg + 1 Egg Yolk
  • 1 Spring Onion, sliced
  • 1 Red Chili, sliced or chopped
  • 4 Cups Chicken Flavored Cooked Rice
  • About 2 tbsp Soy Sauce
  • About 2 tbsp Sesame Oil
  • About 1/2 tbsp MSG

Instructions

  1. Prepare Rice: Cook the chicken flavored rice according to the package instructions and set aside to cool slightly.
  2. Whisk Eggs: In a bowl, whisk together 1 whole egg and 1 egg yolk until well combined.
  3. Heat Wok: Coat a wok pan with peanut oil and heat it over medium heat. Wait until the oil starts to smoke, then carefully tilt the wok to discard excess oil.
  4. Sauté Aromatics: Add the smashed garlic cloves and sliced shallot to the wok. Fry for about 3 minutes until fragrant and slightly golden.
  5. Cook Eggs: Pour in the whisked eggs and stir continuously in the wok until the eggs are almost completely solidified but still moist.
  6. Add Rice: Add the cooked chicken flavored rice to the eggs and aromatics, mixing thoroughly to combine all the ingredients evenly.
  7. Season Rice: Pour in soy sauce and sesame oil, then press and flatten the rice gently with the back of your spoon or spatula to allow even absorption and slight caramelization.
  8. Finish with Flavors: Add the MSG, sliced spring onion, and chopped red chili to the wok. Stir everything together well to combine all flavors and ingredients evenly. Remove from heat and serve immediately.

Notes

  • Use day-old rice or allow freshly cooked rice to cool slightly for the best texture in fried rice.
  • You can adjust the amount of soy sauce and sesame oil based on your taste preference for saltiness and nuttiness.
  • MSG enhances umami flavor but can be omitted if preferred.
  • Add more chili if you prefer extra heat.
  • Use a well-seasoned wok or non-stick pan to prevent sticking and achieve a good sear.
