Ingredients

Special Sauce

  • ½ cup mayonnaise
  • 2-3 tbsp ketchup
  • ½ tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp sriracha (optional, for a spicy kick)
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • Optional splash of pickle juice

Sides and Toppings

  • 3-4 cups frozen waffle fries (tater tots or crinkle fries can be substituted)
  • Dill pickles

Instructions

  1. Mix the Burger Seasoning: In a small bowl, whisk together garlic powder, paprika, onion powder, oregano, salt, pepper, and cayenne pepper to create the burger seasoning blend.
  2. Prepare the Special Sauce: Combine mayonnaise, ketchup, yellow mustard, Worcestershire sauce, sriracha, garlic powder, paprika, and optional pickle juice in a bowl. Stir well, then adjust seasoning to taste and chill in the refrigerator until ready to serve.
  3. Preheat the Skillet: Heat a large skillet over medium-high heat until hot. Add olive oil and wait until it shimmers.
  4. Cook the Turkey Patty: Form the ground turkey into an intact rectangle about 1½ to 2 inches thick. Place it in the skillet and sear undisturbed for 3-4 minutes to form a crispy brown exterior. Sprinkle half the burger seasoning on the top side that is not in contact with the heat.
  5. Flip and Season: Flip the turkey over, breaking it into smaller pieces to ensure even cooking. Sear the other side for several minutes, then sprinkle the remaining burger seasoning over the cooked surface.
  6. Finish Cooking: Break the turkey into bite-sized chunks and continue cooking until the meat is fully cooked and reaches an internal temperature of 165°F (74°C).
  7. Enhance Flavor: Remove the cooked turkey from heat, drizzle Worcestershire sauce over it, and stir to combine thoroughly.
  8. Assemble the Burger Bowls: Arrange cooked turkey chunks over air-fried or baked waffle fries. Top with your choice of fresh toppings such as dill pickles, shredded romaine, diced tomatoes, red onion slices, and shredded cheddar cheese. Drizzle with the prepared special sauce before serving.
