Traditional Turkish Coffee (Turk Kahvesi) is a rich and aromatic coffee experience made by simmering finely ground coffee with water and sugar in a special pot called a cezve. This method produces a thick, frothy brew with a strong flavor and a distinct cultural ritual.

  • 4 teaspoons finely ground Turkish coffee
  • 1 cube sugar (optional, depending on desired sweetness)

Instructions

  1. Prepare Ingredients: Measure ½ cup of cold water into a cezve or small pot specifically designed for Turkish coffee. Add 4 teaspoons of finely ground Turkish coffee to the water, followed by 1 cube of sugar if you prefer your coffee sweetened.
  2. Mix the Coffee: Stir the mixture gently to combine the coffee grounds, water, and sugar evenly, ensuring the sugar is partially dissolved at this stage.
  3. Heat the Coffee: Place the cezve on low heat. Slowly heat the mixture without stirring. Watch carefully as the coffee begins to foam and a thick froth forms on top. This process usually takes about 4–5 minutes.
  4. First Foam Rise: Just before the coffee boils over, remove the cezve from the heat. Using a spoon, skim some of the foam and place it into each serving cup to enhance the texture and flavor.
  5. Reheat the Coffee: Return the cezve to low heat and allow the coffee to rise again carefully, without boiling over. Remove from heat once the foam forms up again.
  6. Serve: Pour the coffee slowly into small Turkish coffee cups, distributing the foam evenly. Let the coffee grounds settle at the bottom before drinking.

Notes

  • The sugar cube can be substituted with granulated sugar to taste; traditionally, the amount of sugar can vary as 'sade' (no sugar), 'az şekerli' (a little sugar), or 'şekerli' (with sugar).
  • Use water that is cold or at room temperature for best foam development.
  • The coffee grind must be powder fine, much finer than espresso grind.
  • Do not stir or boil the coffee vigorously as it will ruin the foam and the texture.
  • Serve with a glass of water and optional Turkish delight to complete the traditional experience.
