A delicious and easy-to-make sandwich featuring Trader Joe’s sun-dried tomato focaccia bread layered with deli turkey, fresh tomato slices, greens, red onion, and a flavorful pesto mayo spread. Ingredients

Sandwich Base

  • 1 loaf of Trader Joe’s sun-dried tomato focaccia
  • 1 large tomato, thinly sliced
  • One handful of greens (sprouts, microgreens, spinach, etc.)
  • A few pieces of thinly sliced red onion
  • One 7-ounce package deli turkey

Spread

  • 1/4 cup mayonnaise
  • 1/4 cup pesto (such as the Costco brand pesto)

Instructions

  1. Toast the Focaccia: Preheat your oven to 400°F (200°C). Place the entire loaf of sun-dried tomato focaccia on a baking sheet and toast it in the oven for 5 to 8 minutes until it’s warm and slightly crispy on the outside.
  2. Make Pesto Mayo: In a small bowl, combine the mayonnaise and pesto thoroughly to create a creamy pesto mayo spread that will add vibrant flavor to your sandwich.
  3. Slice the Bread Horizontally: Lay the toasted focaccia flat on a cutting board. Using a serrated knife held sideways, carefully slice horizontally through the center of the loaf to separate it into top and bottom pieces. Keep the top piece flat and set aside.
  4. Assemble the Sandwich: On the bottom half of the focaccia, spread a generous layer of pesto mayo. Layer the deli turkey evenly on top, followed by the thinly sliced tomato, handful of greens, and thin pieces of red onion. Finish by adding dollops of pesto mayo directly on top of the greens and onions.
  5. Complete and Cut the Sandwich: Gently press the top slice of focaccia back onto the sandwich, ensuring it’s secure and pressed slightly to hold everything together.
