  • 3 tbsp cashew butter (Or almond butter. Approx. 50g)
  • 2 tsp vanilla extract
  • 1 tbsp apple cider vinegar (Or lemon juice; approx. 15ml)
  • 2 ½ cups rolled oats (Approx. 220g)
  • 1 tbsp cocoa powder
  • ¼ cup vanilla protein powder (Optional; about 25–30g. Or sub for extra rolled oats)
  • 1 ½ tsp baking powder (Approx. 6g)
  • ½ tsp baking soda (Approx. 3g)
  • ⅛ tsp salt (Approx. 0.5g)

Yogurt Layer

  • 3 cups thick plain yogurt (Approx. 680g, preferably soy yogurt for vegan option)
  • 2 tbsp cashew butter (Or almond butter; approx. 30g)
  • ½ tsp vanilla extract
  • ¼ cup vanilla protein powder (Optional but recommended for 'mousse' consistency. Approx. 25–30g)
  • Maple syrup to taste (Optional)
  • Tiny pinch of salt
  • Cocoa powder (for dusting)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and lightly grease a 1.5-quart baking dish (about 9×7 inches / 23×18 cm) to prevent sticking.
  2. Prepare Wet Ingredients: In a large bowl, mash the bananas until smooth. Add the soy milk, espresso (or strong coffee), maple syrup, cashew or almond butter, vanilla extract, and apple cider vinegar. Mix thoroughly until all wet ingredients are well combined.
  3. Combine Dry Ingredients: In a separate bowl, stir together the rolled oats, cocoa powder, vanilla protein powder (if using), baking powder, baking soda, and salt ensuring an even distribution.
  4. Mix Batter: Pour the wet ingredient mixture into the dry ingredients and stir well until fully combined into a consistent batter.
  5. Bake Oats: Transfer the batter into the prepared baking dish and smooth the surface with a spatula. Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the top turns a golden brown color.
  6. Cool Baked Oats: Remove the baked oats from the oven and let them cool completely in the baking dish to ensure proper texture before adding the yogurt layer.
  7. Prepare Yogurt Layer: In a medium bowl, warm the cashew or almond butter in the microwave for 10 seconds to soften it. Add vanilla extract and stir to loosen the nut butter. Mix in 1–2 tablespoons of the yogurt until smooth.
  8. Combine Yogurt Mix: Add the remaining yogurt, pinch of salt, and optional vanilla protein powder to the bowl. Stir thoroughly until the mixture is smooth and has a mousse-like consistency.
  9. Taste and Sweeten: Taste the yogurt mixture and add a dash of maple syrup if additional sweetness is desired. Mix again to combine.
  10. Assemble: Once the baked oats are completely cooled, spread the yogurt mixture evenly over the top of the oats.
