Ingredients

Chicken

  • 2 small chicken breasts
  • 2 tablespoons poultry seasoning (or salt, pepper, garlic powder mix)
  • 1 tablespoon olive oil (for chicken)

Garlic Butter Spread

  • 1 1/2 sticks unsalted butter (divided as 1 stick melted and 1/2 stick for sauce)
  • 2 tablespoons minced garlic (or garlic paste, divided as 1 tablespoon for butter spread, 1 tablespoon for sauce)
  • 2 tablespoons chopped parsley (divided as 1 tablespoon for butter spread, 1 tablespoon for sauce)
  • 1 teaspoon crushed red pepper flakes

Cheese and Sauce

  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup heavy cream

Bread

  • 1 Italian style loaf

Instructions

  1. Prepare the chicken: Cut the chicken breasts into ½ inch pieces. Place them in a bowl and drizzle with 1 tablespoon of olive oil. Season with 1 tablespoon of poultry seasoning or a mix of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken until golden and cooked through, about 5-7 minutes.
  2. Make the garlic butter spread: Slice the bread lengthwise in half. In a small bowl, combine 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Mix well.
  3. Toast the bread: Spread the garlic butter mixture evenly on both halves of the bread. Place them in a preheated oven at 350°F (175°C) and toast for 5-10 minutes. Check after 5 minutes and continue toasting until the bread reaches your desired golden crispness.
  4. Prepare the Alfredo sauce: Using the same pan that cooked the chicken, heat it over medium-low heat. Add ½ stick of butter and allow it to melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant.
  5. Finish the sauce: Lower the heat to low and add ½ cup heavy cream, ¼ cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Simmer gently, stirring continuously, until the sauce thickens slightly, about 3-5 minutes. Remove from heat.
  6. Assemble the garlic bread: Spread half of the Alfredo sauce over the toasted bread halves. Top evenly with the cooked chicken pieces, then sprinkle the shredded mozzarella cheese on top. Drizzle the remaining Alfredo sauce over the cheese and chicken.
  7. Bake to melt cheese: Return the assembled bread to the oven at 350°F (175°C) and bake for another 5 minutes or until the mozzarella cheese is fully melted and bubbly.
  8. Serve: Slice the chicken Alfredo garlic bread into 2-3 inch pieces and serve warm. Enjoy your comforting and flavorful meal!

Notes

  • Ensure chicken pieces are cut evenly to promote uniform cooking.
  • Adjust crushed red pepper flakes quantity to control spiciness.
  • Use freshly shredded cheese for better melting and flavor.
  • You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less rich.
  • If you like extra garlic, add more minced garlic to the butter spread or sauce.
  • For a crispier crust, broil the garlic bread for 1-2 minutes while monitoring closely.
