Ingredients

Main Ingredients

  • 2 teaspoons salt
  • 1 1/2 pounds ground beef
  • 1/2 onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeno, minced
  • 4 carrots, minced (optional)
  • 2 1/2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoon oregano
  • 1 teaspoon garlic powder
  • 34 tablespoons tomato paste
  • 1 (28-ounce) can fire roasted crushed tomatoes
  • 2 (14-ounce) cans beans, rinsed and drained (black beans and pinto beans recommended)
  • 2 cups beef broth or chicken broth (plus more to thin as needed)

Toppings

  • Avocado
  • Cheese
  • Sour cream
  • Tortilla chips
  • Red onion
  • Cilantro

Instructions

  1. Prepare the Ingredients: Dice half an onion, mince the garlic cloves, jalapeno, and optional carrots to have all fresh ingredients ready for cooking.
  2. Brown the Ground Beef: In a large pot or Dutch oven over medium heat, add ground beef and the 2 teaspoons salt. Cook until the beef is fully browned and no longer pink. Drain excess fat if necessary.
  3. Sauté Aromatics: Add diced onion, minced garlic, jalapeno, and carrots to the browned beef. Cook for about 4-5 minutes until the vegetables soften and the mixture is fragrant.
  4. Add Spices and Tomato Paste: Stir in chili powder, cumin, oregano, garlic powder, and tomato paste. Cook for 1-2 minutes to bloom the spices and deepen the flavors.
  5. Add Tomatoes and Beans: Pour in the fire-roasted crushed tomatoes, rinsed beans, and 2 cups of beef or chicken broth. Stir to combine well.
  6. Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer gently for at least 45 minutes to 1 hour, stirring occasionally. Add more broth as needed to achieve desired consistency.
  7. Adjust Seasonings and Serve: Taste and adjust salt or spices as desired. Serve hot with your choice of toppings like avocado slices, shredded cheese, sour cream, tortilla chips, chopped red onion, and fresh cilantro.

Notes

  • For extra depth, simmer chili longer on low heat, up to 2 hours, stirring occasionally.
  • Carrots are optional but add natural sweetness and nutrition.
  • Use fire-roasted tomatoes for a smoky flavor; regular crushed tomatoes can substitute but with a milder taste.
  • To make it spicier, keep seeds in the jalapeno or add cayenne pepper.
  • This chili stores well in the refrigerator for up to 4 days and freezes beautifully for up to 3 months.
