  • 6 medium vine-ripened tomatoes, stem removed
  • 2 jalapeno peppers
  • 1 poblano pepper
  • 1 cup green onion, diced
  • 1 cup canned diced tomatoes

  • 2 cloves garlic, minced

Instructions

  1. Heat and blister vegetables: Heat a large skillet over medium-high heat. Place the tomatoes, jalapeno peppers, and poblano pepper in the skillet. Rotate occasionally to ensure the vegetables blister on multiple sides, which should take around 20 minutes. Once blistered, remove from heat and allow to cool.
  2. Prep vegetables for blending: After cooling, chop off the stems from the peppers, and remove the seeds from the jalapeno peppers if you want less heat (optional to keep some seeds). Cut all vegetables into large pieces to prepare for blending.
  3. Blend salsa base: In a blender, combine the blistered tomatoes, peppers, diced green onion, lime juice, and canned diced tomatoes. Pulse quickly for about 5 seconds to mix while keeping texture chunky.
  4. Add seasoning and finish blending: Add minced garlic, chopped cilantro, and chicken bouillon powder or sea salt to the blender. Pulse for another 15 seconds until the salsa is well blended but still chunky.
  5. Chill and serve: Transfer the salsa to a large bowl and refrigerate until cooled. Serve chilled with your favorite Mexican dishes or as a dip with chips.
