Instructions

  1. Reduce the cider: Pour the 2 cups of fresh apple cider into a small saucepan and bring it to a simmer over medium-low heat. Allow it to simmer until it reduces down to about 1/3 cup.   2. Mix the dry ingredients: In a large mixing bowl, whisk together 3 1/2 cups flour, 1 tablespoon cornstarch, 1 teaspoon kosher salt, 1 1/2 teaspoons baking powder, 3/4 teaspoon baking soda, 1 1/2 teaspoons ground cinnamon, and 1/2 teaspoon freshly grated nutmeg until fully combined. Set aside.
  3. Cream the butter and sugars: Using a stand mixer fitted with the paddle attachment (or a hand mixer), beat 8 tablespoons unsalted butter (room temperature) with 1/2 cup granulated sugar and 1/2 cup brown sugar on medium-high speed.
