Ingredients

Chicken and Marinade

  • 1 tablespoon honey
  • ¼ cup water (or more, if needed)
  • 1 teaspoon cornstarch
  • 2 teaspoons water

Instructions

  1. Prepare the Chicken: Cut the chicken thighs into 1-inch (2.5 centimeters) pieces and place them in a mixing bowl. Add 2 tablespoons teriyaki sauce, honey, grated ginger, 1 tablespoon cornstarch, black pepper, and salt. Use kitchen tongs to mix everything well ensuring the chicken is evenly coated with the marinade.
  2. Thread onto Skewers: Thread the marinated chicken pieces onto skewers, filling about 4 inches (12 centimeters) on each skewer. Make sure to leave small gaps between the meat pieces to allow for even cooking.
  3. Grill the Skewers: Cook the chicken skewers on a preheated grill until fully cooked through. This typically takes about 10-12 minutes, turning occasionally to ensure even grilling and nice char marks.
  4. Make the Teriyaki Sauce: While the chicken is grilling, combine 2 tablespoons teriyaki sauce, soy sauce, honey, and ¼ cup water in a small saucepan. Simmer on low heat for about 2 minutes.
  5. Thicken the Sauce: Mix 1 teaspoon cornstarch with 2 teaspoons water to create a slurry. Slowly pour the slurry into the simmering sauce while stirring constantly until the sauce thickens. Once it reaches a boil and thickens, remove from heat.
