These Tall & Flaky Buttermilk Biscuits are tender, buttery, and layered with flaky goodness. Perfect for breakfast or as a side, these biscuits combine cold butter and buttermilk to create a classic Southern favorite with a golden crust and a soft, airy interior.

Ingredients

Dry Ingredients

  • 2½ cups (325 g) all-purpose flour
  • 2 tablespoons baking powder
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt

Wet Ingredients

  • ½ cup (113 g) cold unsalted butter, cut into ¼-inch cubes
  • 1 cup (240 ml) cold buttermilk
  • ¼ cup (57 g) unsalted butter, melted, for brushing

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C) to get it ready for baking the biscuits.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, granulated sugar, and salt. Stir to evenly distribute the leavening agents and seasoning.
  3. Cut in the Butter: Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces.
  4. Add the Buttermilk: Pour in the cold buttermilk and gently stir with a spoon or spatula until the dough just comes together. Avoid overmixing to keep the biscuits flaky.
  5. Form the Dough: Turn the dough out onto a lightly floured surface. Gently fold it over onto itself 2-3 times to create layers. Pat the dough into a rectangle about ¾-inch thick.
  6. Cut the Biscuits: Using a 2½-inch round cutter, press straight down into the dough without twisting to keep the layers intact. Gather scraps and repeat until all dough is used.
  7. Bake: Place the biscuits on a baking sheet close together for softer sides or spaced apart for crispier sides. Bake in the preheated oven for 12-15 minutes until golden brown.
  8. Brush with Butter: Immediately after removing from the oven, brush the tops of the hot biscuits with melted unsalted butter for a rich finish.
  9. Serve: Allow the biscuits to cool slightly before serving warm. Enjoy with your favorite breakfast dishes or as a comforting side.

Notes

  • Keep the butter and buttermilk cold to help create flaky layers.
  • Do not overwork the dough to ensure tenderness.
  • Use a sharp cutter pressed straight down to maintain biscuit height.
  • Brushing with melted butter adds flavor and a shiny crust.
  • Baking at a high temperature develops a golden, crisp exterior.
