Ingredients

Meat and Seasoning

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • Kosher salt and ground black pepper (to taste)

Salad

  • 1 head romaine lettuce or iceberg lettuce (chopped)
  • 1 cup grape tomatoes (chopped)
  • 1 cup black beans (drained and rinsed)
  • 1 avocado (diced)
  • ½ cup shredded cheese
  • ¼ cup diced red onion
  • ¼ cup freshly chopped cilantro
  • 1 lime

Toppings and Optional

  • ½ cup salsa
  • Optional: tortilla chips
  • Optional: sour cream (mentioned in instructions)

Instructions

  1. Cook beef: In a pan over medium-high heat, add the ground beef and break it into small pieces with your spatula. Cook for about 8 minutes or until it starts to brown. Then drain the fat from the beef.
  2. Add seasoning: Add in the taco seasoning, stir everything well, and cook for another minute or two to blend the flavors.
  3. Assemble salad: In a large salad bowl, layer the chopped lettuce with the browned beef, black beans, chopped tomatoes, diced avocado, diced red onion, and shredded cheese.
  4. Add toppings: Dollop some salsa, sour cream, a squeeze of fresh lime juice, and sprinkle chopped cilantro leaves on top. Serve with tortilla chips if desired.
