Ingredients

Chicken

  • 4 chicken breasts, cubed into 1-inch pieces

Vegetables

  • 4 cups broccoli florets
  • 2 red bell peppers, diced

Sauce and Garnish

  • 2 tbsp sesame oil
  • 3 tbsp sweet chilli sauce
  • 2 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp ginger, grated
  • 2 tsp sesame seeds
  • 1/2 cup cilantro leaves
  • 1 lime, sliced into 4 wedges

Instructions

  1. Prepare the sauce: In a small bowl, combine the sesame oil, sweet chilli sauce, fresh lime juice, minced garlic, and grated ginger. Mix well until all ingredients are fully blended.
  2. Preheat and prepare the baking sheet: Preheat your oven to 400°F (200°C). Lightly oil a baking sheet to prevent sticking and to help crisp the food during baking.
  3. Coat the chicken: In a separate bowl, add the cubed chicken breasts and pour in 1/3 cup of the prepared sauce. Stir thoroughly to coat all the chicken pieces evenly with the sauce.
  4. Arrange on the sheet pan: Spread the coated chicken pieces evenly on the prepared baking sheet. Around the chicken, distribute the broccoli florets and diced red bell peppers. Drizzle the remaining sauce over the vegetables for extra flavor.
  5. Bake the dish: Place the baking sheet in the oven and bake for 15 minutes or until the chicken is cooked through and the vegetables are tender-crisp.
