  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar (or coconut sugar)
  • ¼ teaspoon ground cumin
  • ¼ teaspoon turmeric
  • ¼ teaspoon red chili flakes
  • ½ teaspoon salt
  • 1 lime, zest and juice

Instructions

  1. Heat the oil: Warm 1 tablespoon of neutral oil in a small saucepan over medium heat to prepare for tempering the spices.
  2. Pop mustard seeds: Add ¾ teaspoon yellow mustard seeds to the hot oil, letting them pop for about 30 seconds to release their aroma and flavor.
  3. Cook aromatics: Stir in ½ cup finely chopped red onion, 2 cloves minced garlic, and 1 tablespoon grated ginger. Cook for 2–3 minutes until softened and fragrant.
  4. Add mango and spices: Mix in 2 cups diced ripe mango, 2 tablespoons apple cider vinegar, 2 tablespoons brown sugar, ¼ teaspoon ground cumin, ¼ teaspoon turmeric, ¼ teaspoon red chili flakes, and ½ teaspoon salt. Stir well to combine all ingredients.
  5. Simmer mixture: Allow the chutney to simmer uncovered for 15–20 minutes, stirring occasionally, until it thickens to your desired consistency.
  6. Finish with lime: Remove from heat and stir in the zest and juice of 1 lime to add brightness and acidity to the chutney.
  7. Cool and store: Let the chutney cool completely before transferring it to a sealed jar. Store in the refrigerator for up to 2 weeks.
  8. Enjoy: Use as a flavorful condiment to complement various dishes or as a dip.
