Ingredients

  • 1 large red bell pepper, chopped into large chunks
  • 1 small red onion, chopped into large chunks
  • 1 head broccoli, cut into florets (about 4 cups broccoli florets)
  • 1 cup fresh or frozen pineapple chunks

For serving:

  • Cooked brown or coconut rice
  • Chopped fresh scallions, for topping

Instructions

  1. Make the sauce: In a medium bowl, whisk together the low sodium soy sauce, water, rice wine vinegar, honey, brown sugar, minced garlic, freshly grated ginger, and arrowroot starch until smooth. Set the sauce mixture aside.
  2. Prepare the stir fry: Heat half of the sesame oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add the remaining sesame oil. Toss in the red bell pepper chunks, red onion chunks, and broccoli florets. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  4. Add pineapple and chicken: Add the pineapple chunks and cooked chicken back into the skillet with the vegetables. Stir everything together to combine evenly.
  5. Pour in the sauce: Pour the prepared sauce over the stir fry mixture. Stir continuously and cook for another 2-3 minutes, allowing the sauce to thicken and coat all ingredients evenly.
