Ingredients

Beef and Seasoning

  • 2-3 lb chuck or shoulder beef roast
  • Sea salt to taste

  • 1/2 tsp thyme
  • 1/2 tsp cumin
  • 1/4 tsp allspice

Instructions

  1. Season the beef: Wash the beef roast and pat it dry. Generously season it with sea salt, pepper, granulated garlic, turmeric, oregano, thyme, cumin, and allspice, ensuring all sides are coated evenly.
  2. Prepare the slow cooker: Add the chopped onion to the base of your slow cooker, spreading it evenly to create a flavorful bed for the meat.
  3. Brown the roast: Heat a skillet over medium-high heat. Brown the roast on all sides, including the edges, for about 2-3 minutes per side. This step adds depth of flavor and seals in juices.
  4. Transfer to slow cooker: Move the browned roast into the slow cooker on top of the onions.
  5. Deglaze skillet: Turn off the skillet heat and pour 3/4 cup of your chosen liquid (bone broth, water, or red wine) into the skillet. Scrape the bottom with a spatula to lift all the flavorful bits, then pour this mixture into the slow cooker over the roast.
