Sunshine Salad Dressing is a bright, tangy, and slightly sweet dressing made with Greek yogurt, Dijon mustard, honey, lemon juice, and apple cider vinegar. This versatile dressing adds a fresh, bold flavor to salads and can be stored for up to two weeks in the refrigerator.

Ingredients

Salad Dressing Ingredients

  • ½ cup plain Greek yogurt (any % fat will do)
  • ¼ cup extra-virgin olive oil
  • ¼ cup Dijon mustard
  • 3 to 4 tablespoons honey, to taste
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar or more lemon juice
  • 1 clove garlic, pressed or minced
  • ½ teaspoon fine sea salt
  • 10 twists of freshly ground black pepper

Instructions

  1. Combine Ingredients: In a 2-cup liquid measuring cup or medium bowl, add the Greek yogurt, extra-virgin olive oil, Dijon mustard, honey, lemon juice, apple cider vinegar, pressed garlic, sea salt, and freshly ground black pepper.
  2. Whisk Thoroughly: Use a whisk to blend all the ingredients together until the dressing is smooth and fully combined.
  3. Taste and Adjust Seasoning: Sample the dressing and add additional ground black pepper if desired. If the dressing tastes too tart, whisk in an extra tablespoon of honey to balance the flavors.
  4. Store Properly: Transfer any leftover dressing to a covered container and refrigerate. The dressing will keep well for 10 to 14 days.

Notes

  • This dressing is bold and tangy by nature; adjust the sweetness with more honey to suit your preference.
  • Use fresh garlic for optimal flavor, or substitute with garlic powder if needed.
  • The dressing can be customized with more lemon juice or apple cider vinegar depending on your taste.
  • Shake or stir before each use as ingredients may separate over time.
  • Perfect for green salads, grain bowls, or as a dip for veggies.
