Ingredients

Sun-Dried Tomato Mixture

  • 1 jar (8 ounce) oil-packed sun-dried tomatoes
  • 1-2 cloves garlic, grated
  • 1 small shallot, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked or regular paprika
  • 1-2 teaspoons chili flakes

Cheese & Garnish

  • 1/2 cup grated parmesan
  • Fresh basil, for serving

Instructions

  1. Drain and Prepare Tomatoes: Drain the oil from the sun-dried tomato jar into a pot, measuring to have about 1/2 cup of oil. Chop approximately 1/3 cup of sun-dried tomatoes and mix them into the oil.
  2. Simmer Aromatics: Add the grated garlic, finely chopped shallot, dried oregano, dried thyme, paprika, and chili flakes to the pot with the oil and tomatoes. Set the pot over low heat and gently simmer until warm, about 5 minutes, to allow the flavors to meld.
  3. Combine with Parmesan: Place the grated parmesan in a serving bowl and pour the hot infused oil mixture over the cheese, allowing the warmth to slightly soften and infuse the parmesan with flavor.
  4. Garnish and Serve: Top the dip with fresh basil leaves for added aroma and freshness. Serve immediately with crusty bread or your preferred dipping accompaniment.
