These refreshing strawberry popsicles are a quick and healthy treat made with fresh strawberries, honey, and a hint of vanilla. Perfect for a hot day, they are natural, sweetened with honey, and easy to prepare in just a few minutes before freezing.

Ingredients

Strawberry Popsicle Ingredients

  • 2 pints fresh strawberries, washed and hulled (about 4 cups)
  • ⅓ cup honey
  • ¼ cup water
  • 2 tablespoons strawberry jam
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract or vanilla bean paste

Instructions

  1. Blend popsicle mixture: Place the strawberries, honey, water, strawberry jam, lemon juice, and vanilla extract into a blender. Blend on high speed until the mixture is smooth and well combined, ensuring all the ingredients are fully incorporated.
  2. Pour into popsicle molds: Carefully pour the blended mixture into your popsicle molds. Leave a small space at the top of each mold to allow for expansion as the liquid freezes.
  3. Freeze and enjoy: Place the filled molds into the freezer and let them freeze for 4 to 6 hours or until fully solid. For best results, freeze overnight so they are ready to enjoy the next day.

Notes

  • If you don’t have strawberry jam, you can increase the honey slightly or add a bit more lemon juice to balance the sweetness.
  • You can substitute honey with maple syrup or agave for a different sweetener option.
  • Make sure the strawberries are completely hulled and fresh for the best flavor and texture.
  • To remove the popsicles easily, run warm water briefly over the outside of the molds.
  • These popsicles can be stored in the freezer for up to 1 month for best taste.
