  • 3/4 cup unsweetened oat milk (or milk of choice)
  • 1 tablespoon chia seeds
  • 1 teaspoon honey or maple syrup (or to taste)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Macerate strawberries: In a small bowl, stir together the chopped strawberries with 1 teaspoon of your choice of sweetener (honey, maple syrup, or organic cane sugar). Allow this mixture to sit while you prepare the oats so the strawberries release their juices.
  2. Mix the oats base: In a jar, container, or bowl, combine the rolled oats, plain Greek yogurt, unsweetened oat milk, chia seeds, additional sweetener (honey or maple syrup), and vanilla extract. Stir well until all ingredients are evenly incorporated.
  3. Add strawberries: Pour the macerated strawberries along with their juices into the oats mixture and stir thoroughly to distribute the berries evenly.
  4. Refrigerate: Cover the jar or container and place it in the refrigerator. Let it chill overnight for best results, or at least 3-4 hours to allow the oats and chia seeds to absorb the liquid and soften.
