These Strawberry Oat Bars combine a luscious, homemade strawberry filling with a buttery oat crust, baked to golden perfection. Perfect as a sweet snack or dessert, they offer a delightful balance of tart fruit and crumbly oat texture, ideal for any occasion.

Ingredients

For the filling:

  • 10 ounces (300g) strawberries, hulled and sliced
  • 1 tbsp (15g) cornstarch
  • ¼ cup (50g) sugar

For the crust:

  • 1 ½ cups (187.5g) all-purpose flour
  • 1 ½ cups (135g) oats
  • ⅔ cup (142g) cane sugar
  • ½ tsp salt
  • ¼ tsp ginger powder
  • 1 tsp baking powder
  • 1 ¾ sticks (200g) unsalted butter, cold and cubed

Instructions

  1. Prepare the filling: In a medium saucepan over medium heat, combine the hulled and sliced strawberries with cornstarch and sugar. Bring the mixture to a boil, stirring occasionally. Allow it to boil gently for 5-7 minutes until the filling thickens and becomes syrupy. Remove from heat and set aside.
  2. Preheat the oven and prepare the pan: Preheat your oven to 350°F (180°C) placing a rack in the middle. Line a 9x9 inch (22.8cm x 22.8cm) baking dish with parchment paper to prevent sticking.
  3. Make the crust crumb mixture: In a large mixing bowl, combine the all-purpose flour, oats, cane sugar, salt, ginger powder, and baking powder. Add the cold cubed unsalted butter and mix it with your fingertips until the mixture forms a slightly moist coarse crumb.
  4. Assemble the bars: Sprinkle half of the crumb mixture evenly into the lined pan. Press down lightly with the palm of your hand to create a compact base. Pour the prepared strawberry filling over this base, spreading evenly to cover the entire surface. Sprinkle the remaining crumb mixture evenly on top.
  5. Bake: Place the baking dish in the preheated oven and bake for 40 minutes or until the top is golden brown and the filling is bubbly. Remove from the oven and transfer to a cooling rack.
  6. Cool and serve: Let the bars cool completely in the pan on the rack. Once cooled, carefully lift the bars out using the parchment paper edges, peel off the parchment, and cut into squares for serving.
