A refreshing and colorful Strawberry Jello Pie featuring a crisp pie crust filled with fresh strawberries and a sweet gelatin glaze, topped optionally with whipped cream. Perfect for a light, fruity dessert that requires minimal cooking and offers a vibrant presentation.

Ingredients

Gelatin Mixture

  • 1 cup water (227g, cold 40-60°F)
  • 1 cup granulated sugar (200g, adjust depending on strawberry sweetness)
  • 3 tbsp cornstarch (21g)
  • 3 oz strawberry Jell-O mix (85g, 1 box)

Pie Base & Filling

  • 1 (9-inch) pie crust (213g, store-bought or premade)
  • 1 pint fresh strawberries (454g, quartered)

Topping (Optional)

  • Whipped cream, for serving

Instructions

  1. Prepare Gelatin Mixture: In a small saucepan, combine cold water, granulated sugar, and cornstarch. Heat gently to a simmer while whisking constantly until sugar dissolves completely. Remove from heat and stir in the strawberry Jell-O powder until dissolved. Let the mixture cool slightly.
  2. Bake Pie Crust: While preparing the gelatin, bake the pie crust according to the package's instructions or prepare a pre-baked crust. Let it cool completely to prevent sogginess.
  3. Assemble the Pie: Once the crust is cooled, layer the quartered fresh strawberries evenly on the bottom of the pie crust.
  4. Add Gelatin Layer and Chill: Pour the slightly cooled gelatin mixture over the strawberry layer carefully. Place the pie in the refrigerator and chill for 2 to 4 hours until the gelatin is fully set.
  5. Serve: Optional: Top the set pie with whipped cream before serving for added richness and presentation.

Notes

  • Use fresh, ripe strawberries for best flavor and texture.
  • The pie crust can be pre-baked to reduce total preparation time.
  • Adjust sugar quantity based on the sweetness of your strawberries.
  • Allow the gelatin mixture to cool slightly before pouring, to ensure the strawberries aren’t cooked or crushed.
  • Chill time can vary; verify the gelatin is set firmly before serving.
  • Whipped cream topping is optional but recommended for a creamy complement.
