This quick and flavorful Chinese-style steamed enoki mushroom recipe features tender enoki mushrooms cooked with aromatic garlic and chili peppers, then finished with a savory drizzle of soy sauce and sesame oil. Ideal as an appetizer or a side dish, it's easy to prepare and can be made gluten-free by substituting tamari for soy sauce.

Ingredients

Enoki Mushrooms

  • 1 bag (7 oz / 200 g) enoki mushrooms, tough ends removed and torn into thin bunches
  • 1/4 teaspoon sugar
  • Pinch of salt

Seasonings and Sauces

  • 1 tablespoon light soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil

Garlic and Chili Oil

  • 2 tablespoons peanut oil (or vegetable oil)
  • 6 cloves garlic, minced
  • 2 dried Chinese chili peppers, sliced (or bird’s eye chili peppers)

Garnish

  • 1 green onion, sliced

Instructions

  1. Prepare the steamer: Heat 2 inches (5 cm) of water over medium-high heat until it reaches a rolling boil to ensure efficient steaming.
  2. Arrange the mushrooms: Spread the enoki mushrooms evenly on a steam-safe plate. Sprinkle the mushrooms uniformly with 1/4 teaspoon sugar and a pinch of salt to enhance their natural flavor.
  3. Make the garlic chili oil: In a small frying pan over medium heat, warm 2 tablespoons of peanut or vegetable oil. Add the minced garlic and sliced dried chilies, stirring constantly until the garlic just begins to turn golden and fragrant. Quickly pour this hot oil mixture over the prepared mushrooms, allowing the flavors to infuse.
  4. Steam the mushrooms: Place the plate of mushrooms into the steamer. Cover and steam for 6 minutes, or until the mushrooms become tender but still retain some texture.
  5. Finish and serve: Remove the steamed mushrooms from the steamer carefully. Drizzle 1 tablespoon light soy sauce and 1 teaspoon sesame oil over the mushrooms. Sprinkle the sliced green onion on top. Serve immediately as a delicious appetizer or side dish. Gently stir to combine the flavors before eating.
