A vibrant and fresh spring pea salad tossed with crisp radishes, fragrant mint, and chives, finished with a tangy olive oil and vinegar dressing and topped with creamy feta or shaved parmesan. This quick and easy recipe brings out the natural sweetness of peas and the peppery bite of radish, perfect as a light side dish or a refreshing snack.

Ingredients

Peas

  • 1 pound (4 cups) fresh or frozen peas
  • 1 1/2 teaspoons Kosher salt

Dressing and Vegetables

  • 2 tablespoons olive oil
  • 2 tablespoons finely minced yellow onion (about 1/4 small onion)
  • 1/4 teaspoon Aleppo pepper
  • 1 teaspoon white wine vinegar
  • 2 to 3 radishes, thinly sliced
  • 1/4 cup packed mint leaves, chopped
  • 1/4 cup chopped chives

Garnish

  • 2 ounces feta cheese or shaved parmesan

Instructions

  1. Boil the peas: Bring a small pot of water to a boil. Add 1 1/2 teaspoons of Kosher salt, then add the peas. Cook for about 5 minutes until the peas turn bright green and remain slightly firm but tender, avoiding mushiness.
  2. Drain the peas: Turn off the heat and drain the peas thoroughly to remove excess water.
  3. Make the sauce: In a medium skillet over medium heat, add olive oil, minced onion, and Aleppo pepper. Sauté until the onion softens, about 5 minutes. Stir in the white wine vinegar and remove the skillet from heat. Add the sliced radishes and drained peas to the skillet. Fold in chopped mint and chives, then crumble feta cheese over the mixture. Taste and adjust seasoning with more salt or pepper as desired.
  4. Serve: Transfer the prepared peas and vegetables to a serving bowl or plate. Serve warm, at room temperature, or chilled according to preference.

Notes

  • Use fresh or frozen peas based on availability; fresh peas provide the best flavor.
  • Adjust Aleppo pepper quantity for desired heat level or substitute with mild chili flakes.
  • Feta cheese can be substituted with shaved parmesan for a nuttier flavor.
  • This dish can be served warm, room temperature, or cold to suit different occasions and preferences.
  • For a vegan version, omit the cheese or use plant-based cheese alternatives.
